We do not ask ourselves when we buy a fresh or frozen food product how long has it been and how far it has been since it was produced cultured and worked.
We choose fresh and frozen products because they convey the feeling of integrity of the organoleptic and sensory characteristics, quality and safety in the storage. It would be nice to have just fresh products in the fridge without preservatives (so-called zero km). Unfortunately it is not always possible if not with a waste of time that the daily rhythms do not allow us. If we then consider that the modification of social dynamics allows the majority part of us to do "shopping" only once a week, it seems clear that the maintenance of the characteristics of wholesomeness and organoleptic quality of the food for an adequate time, nowadays is increasingly important.
Avoiding the rapid deterioration of the products is possible by operating a series of precautions (technologies and processes) at the base of which the rule of maintaining the cold chain, a temperature stability, positive or negative of the whole mass of the product from the surface to the heart, starting from production up to the sale and finally to consumption. The rings of the "cold chain" become thinner from the distribution platforms until the consumption. The monitoring must therefore be accurate to avoid the risks of thermal abuse at every stage of the production - distribution - consumption. The phases of loading, transport and unloading are the most closely monitored, due to frequent openings for fractional deliveries, but just as much care must be placed in the controls during the local handling and preparation in the kitchen.
Temperature control should be performed by the operators involved in the transport just before loading the goods onto vehicles and operators of the receiving company before unloading.
